Cherry clafouti

Eggs – 2 pcs.
Egg yolks – 3 pcs.
Cream – 250 ml.
Flour – 1 tbsp.
Sugar – 5 tbsp.
Almonds – 4 tbsp.
Cherries – 300 gr.
Butter – to grease the forms
Sugar – 1 tbsp.

Clafouti is a classical French dessert made with eggs and cream. It is traditionally made with cherries. Use fresh cherries with pips removed. You can also use frozen cherries, but be sure to defrost them and drain the excess juice. There are many ways to make clafouti but this one we think is the easiest and most correct.

1 Grease a baking dish with butter and sprinkle the bottom and sides with powdered sugar.

2 Make the almond crumble. To do this, grind almonds in a coffee grinder.

3 In a bowl, whisk together the cream, yolks and eggs.

4 In another bowl, mix all the dry ingredients – flour, ground almonds and sugar.

5 Gently pour the beaten eggs and cream into the dry ingredient mixture.

6 Mix everything well with a whisk, the batter should be liquid and homogeneous, just like an omelet.

7 Place the cherries in a baking dish and pour the batter over them.

8 Put the clafouti in a preheated oven at 200 degrees.

9 Bake for 20 minutes until the batter has risen and is golden.

10 Remove the clafouti from the oven and sprinkle with powdered sugar.

11 Serve warm.
