Shape-shifter pie with apples and lingonberries

Ingredients – for the fruit filling
Apples – 2 pcs.
Butter – 5 tablespoons
Sugar – 200 gr.
Cinnamon – 1/2 teaspoon.
Lingonberry – 3 cups
Maple syrup – 3 tablespoons
Ingredients – for dough
Butter – 180 gr. (soft, room temperature)
Sugar – 200 gr.
Sour cream – 120 gr.
Egg yolk – 3 pcs.
Vanilla essence – 1 tsp.
Flour – 250 gr.
Baking powder – 10 g (one bag)
Salt – a big pinch

Upside down cake or flip cake can be made with a variety of fruits and berries. Now, in winter, we offer a recipe with apples and lingonberries, which is made with maple syrup and cinnamon. Maple syrup can be replaced with honey if you wish, and lingonberries with cranberries or your other favorite berries. Take note of the dough recipe, it turns out very tasty, and it’s quite easy to make. If you’re using frozen berries, be sure to defrost them before cooking, it only takes a couple of minutes if you put them in a colander and rinse under cold water – so they melt almost instantly. The pie turns out quite sweet, if you don’t like very sweet desserts, in this recipe you can safely reduce the amount of sugar to your taste.

1 Preheat the oven to 180 C

2 Line a baking dish (preferably round) with parchment paper. If desired, grease it with butter.

3 Peel the apples and cut them into medium sized cubes.

4 In a small saucepan or frying pan, melt 1 tbsp of butter, put the apples and one tablespoon of sugar and fry them until golden, about 5 minutes. Set aside.

5 Heat a frying pan, add 4 tablespoons of butter, the remaining sugar, cinnamon, cranberries and maple syrup. Add two tablespoons of water if needed.

6 Cook everything together, stirring, for seven minutes, you should get something like a thick jam. The berries should not burn, turn down the heat if necessary. If you are using frozen berries, the cooking time may increase.

7 Set the finished berries aside and let them cool while you make the dough.

8 For the dough, using a whisk or mixer, beat the soft butter and sugar until smooth.

9 Add the sour cream, vanilla essence (or vanilla sugar) and, whisking constantly, begin adding the egg yolks, one at a time. Whisk until completely homogeneous.

10 Add the flour, baking powder and salt. Stir, and then on low speed beat the batter until completely homogeneous, about one minute maximum. The batter should be smooth and lump-free.

11 Place the apples in the bottom of the prepared tin, then spread the cranberries on top.

12 Place the batter on top of the berries and spread it out evenly using a spoon or a silicone spatula.

13 Place the pie in the oven and bake until fully cooked, 40 to 50 minutes.

14 Remove the finished pie from the oven and allow it to cool.

15 Place a plate on the mold and turn the pie over onto it. This way the berries should be on top.
